This fascinating process, consists of the live bacteria feeding off of sugars, producing lactic acid and carbon dioxide. Kefir grains can be used to create many different types of kefir, and can be modified (through longer fermentation periods) to perfect your drink, to your preference! You can reuse kefir grains as many times as you like, adding in different fruits and funky flavours to refresh your gut health!
How do I store my Water Kefir Grains?

What is the shelf life of Water Kefir Grains?
Water kefir grains, when properly cared for, can last indefinitely. However, their shelf life can vary depending on how they are stored:
1. Active State: If kept in sugar water at room temperature, water kefir grains should be refreshed every 24-48 hours to maintain their health.
2. Refrigeration: When stored in sugar water in the refrigerator, water kefir grains can last for up to 2-3 weeks without feeding.
3. Freezing: Water kefir grains can be frozen for long-term storage, lasting up to a year or more. They should be rinsed and placed in a freezer-safe bag or container with a bit of sugar to protect them.
4. Dehydration: Dehydrated kefir grains can last for a year or longer when stored in a cool, dry place. They need to be rehydrated before use, which can take a few days.
Proper storage and regular feeding are key to maintaining the viability and health of water kefir grains.
How do I use my Water Kefir Grains to make Water Kefir?
Ingredients:
- 20g water kefir grains
- 20g sugar (white or brown)
- 200ml water
- Optional: Dried fruits (figs or raisins)
- Optional: 1-2 slices of citrus (lemon or orange)
Equipment:
- 2 x Glass jar
- Non-metal stirring utensil
- Fine mesh strainer
- Plastic or wooden spoon
- Airtight bottle for your finished water kefir
Let's Brew:
1. Mix the sugar into water in a glass jar until it's completely dissolved.
2. Toss in those water kefir grains and let the party begin!
3. Wanna spice it up? Throw in some dried fruits or citrus slices for an extra flavour fiesta.
4. Cover the jar with a cool cloth or coffee filter and secure it with a rubber band. Let it dance at room temperature for 24-48 hours. The longer, the more intense the flavour!
5. Strain the liquid to separate it from the grains. Don't forget your VIP fine mesh strainer and a plastic or wooden spoon – no metal allowed!
6. Ready for round two? For an extra fizz and flavour boost, transfer the liquid to a new airtight bottle, leaving room at the top. Seal the bottle and let it groove for another 24 hours, giving it a gentle shake now and then.
7. Once it hits the right taste notes, pop it in the fridge to chill – it's showtime!
8. Your water kefir grains are like rockstars – reusable for the next big batch. Let the brewing encore begin!
